In my country high quality food is very important; we are used to celebrate all festivities around the table. We frequently cook for friends or members of our families in gathering places called "sociedades" or "txokos" that we can find everywhere. The cookers are the stars; they have a highly appreciated status in our tradition. For everyone, men like woman, being a good cooker is a very positive quality.

In this context, the traditional dish remains the principal ingredient of our gastronomy and we continue to cook almost the same things as a long time ago. However, we do not have enough time to cook them like our mothers and grandmothers used to do and we have started to use new products and tastes in our kitchen, as frozen products. Moreover, we are not enough innovators, and we persist to cook, more or less, at the same way as before.

In fact, it is still early to appreciate the influence of the foreign gastronomy in our daily kitchen cooking and way of life. Obviously, there are many new types of restaurants in our cities, but we rarely taste their food. It is a long process, and we are only at the beginning of this change. It could be positive for the palate, but we have to learn and change more our customs, and evidently, we need time to introduce the new tastes. The change needs time so, meanwhile, we will have to keep on eating our delicious “marmitako”!
