Catalan cuisine is changing a lot, seems that is being involved in a reinventing process; and by the way is also changing the culinary habits. The fact that Ferran Adria and other Catalan cookers has become so popular in the gastronomy world, has made that a lot of restaurants has start serving more and more elaborated or artistic dishes. With this situation, typical and traditional Catalan dishes are being devaluated and probably some of these dishes only remains or will remain in our grandmother dishes repertoire. But in the other hand, I think that this situation has made that people takes conscience about the benefits of our cuisine ingredients, impacting mainly the fast food restaurants and precooked dishes companies, that has need to change their approach by adding more and more Catalan food and dishes in their menu.
Another really interesting thing is that Catalonia, guided by Barcelona, is becoming a more cosmopolitan country; this thing made that people has started to appreciate exotic cuisine, such as: Japanese, Mexican, Chinese, Lebanese, Pakistanis cuisine…
In my opinion is that current situation of Catalan cuisine is very good because we are taking conscience of our typical ingredients and we are being able to mix with other countries cuisine. The only negative point is that we are loosing some of our traditional dishes, but I think that eventually we are going to recover all the traditional dishes.
